I like to use my old iron skillet, preheat it in the oven, then pour the cornbread batter in the hot skillet and bake... it makes a really nice crust, and keeps the cornbread from sticking to the pan.The first to state his case seems right until another comes and cross-examines him.Comment

Well one thing I think people forget is baking is less forgiving than cooking. You can generally get away with eyeballing and taste measurements in cooking and few cooked dishes are going to be affected by altitude, humidity, or precise cook times. Pull out a Turkey a little late? Might be a bit dryer, but mostly okay. Baking needs more precision. Things are mixed in an order and have those measurements for a reason and eyeballing it can be enough to not let that cake rise like it should. Many baked dishes are affected by humidity, altitude, barometric pressure, and have a narrower window of cook times. Pulling a batch of cookies out 5 minutes too late will often burn them.
