  • Eggs!!!!

A neighbor brought over 2 dozen farm fresh eggs.

He's a very nice guy, but about half a bubble off plumb. He explained that his chickens heard about the egg shortage, and have been in high output mode, and he has way more eggs than he can use.

I cooked three of them this morning --- immediately noticed the rich color (darkness) of the yolks*, and they actually smelled better frying. The yolks tend to be more subject to breaking, but I managed to fry three of them with only a little yolk spillage toward the end. All in all, they were really good tasting!!! I even scrambled a couple for Jake, and he said they were the best he's ever had.

I've had duck eggs, quail eggs, emu eggs, and chicken eggs - and almost had an ostrich egg.

I saw a youtube video where a doctor was claiming that senior adults should have two eggs every day, and if you do that for two weeks, you'll notice quite a difference in how you feel.

I love eggs - from my head down to my legs!

*my wife said they almost looked orange

The color of the yolk depends on diet.

My grandmother used to say that if the yolk was golden it meant the chickens ate some grass and bugs as well as feed.

I'm always still in trouble again

And these are certainly free range chickens, no anti-biotics.

By the way, when our children were little, we had chickens, and my youngest daughter would announce in the morning that she was going to go "pick eggs". We tried to help her understand that one "gathers" eggs, but she was adamant -- "no, I pick them". (She was 4)

You forgot to mention eating bacon with the eggs. That's mandatory. You ate bacon with the eggs, right?

How big? The folks I know who have chicken tend to get small to medium-sized eggs.

Once a few months ago I was putting some eggs on the shelf of the grocery store I work at, and an older gentleman came and asked me where the eggs come from. Without thinking about it, I answered "From chickens, but ultimately from God." A short time later after I'd finished there and walked away, I realized that I probably misunderstood his question and he was likely asking about their nationality.

Shoulda told them they were free range and wander all over, but these were from the little known Arctic Hen

The only difference is that they take longer to cook

                    But they come pre-frozen!

Yeah, these were small to medium - which is why I cooked 3 instead of my usual 2.

One of my sisters has three ducks and two chickens, and they are producing like crazy right now, too. We usually have eggs on hand.

The size of the eggs and the color of the shell depends mostly on the breed of chicken. The color of the yolk is more determined by the chicken's diet, but IIRC it is also somewhat determined by breed. They are supposed to eat quite a bit of protein if they are laying.

And furthermore, while doing my job it takes great skill to keep from accidentally bumping my shin on those wire crates. I don't want to be walking around with eggs and pains, after all.
