I plan to do Christmas cookies with frosting. I've made buttercream frosting to get the proportion of butter to sugar right, but it's with vanilla. We used to flavor the different colors with extracts of peppermint, lemon, etc. I suppose I would need to make the frosting without vanilla?

I would leave the vanilla out. You don't need it, really, if you are adding the other flavours. The amount of vanilla in the frosting won't make a difference to the consistency of the mix, neither will the other flavours.

It depends on the icing. a Vanilla can be mixed with others and make a very rich flavor (hence the reason for the additive) but if you want just the plain single flavor, stick with lemon, peppermint, almond etc... Also if you want icing to not melt or be used as a decorative use a mix of shortening and butter.A happy family is but an earlier heaven.
