    Gas Station Catfish -- YUMMY!!!!

    OK, so I love seafood, and sometimes I just want a fish sandwich or something when I'm traveling. Pretty tired of burgers.

    Long John Silvers has a fairly decent fish sandwich, but there aren't many LJS's around.

    So, this morning, I stopped for gas on the way to work ($2.07), and noticed that they had catfish at their little food center. It actually looked like a nice piece of catfish, so I bought a 2 piece "fish and a biscuit".

    Wow -- it was EXCELLENT. Thin battered, crispy, fish was flaky and WHITE, no black lines or veins....

    I USED to enjoy an occasional "gas station pizza", but ... wow... I gotta try their chicken next time.

    There is a gas station near my in-laws owned by an elderly Pakistani couple. The wife runs the food center and makes the BEST chicken strips I've ever eaten. And they are a reasonable price too!

                Incidentally, is Casey's General Store pizza any good?

                              I remember the first time I went fishing for catfish, then had to clean them. We chopped off their heads, then gutted them and skinned them, then watched as the fish body just wiggled back and forth on it own before we filleted them. Weird.

                              But after breading and pan frying them, they were delicious!
